Gunkan consists of a small ball of rice wrapped in a thin band of dry seaweed and topped with various ingredients.
The fish, which is utterly fresh, is sliced paper thin, thick, cubed, or cut in strips, according to the nature of the fish. Sake is traditionally drunk with sashimi.
